The Idea
Port is defined by a single, decisive moment. Unlike most wines, fermentation is deliberately stopped before all the grape sugar is converted into alcohol. This preserves the wine’s natural sweetness, while fortification creates its distinctive richness and warmth. From that point onward, the style of Port is determined largely by how it is aged.
