The Idea

Sherry is one of the world’s most distinctive wines because its character is shaped less by the grape and more by the way it is aged. Every dry Sherry begins as the same neutral base wine. From there, decisions about fortification, flor and oxygen determine whether the wine becomes delicate and fresh or rich and intensely complex.
